• Ingredients:
  • 2-15 oz cans of chickpeas
  • 15 oz can cannelli beans
  • 1 onion
  • 2 celery stalks
  • 2 carrots
  • 2 garlic cloves, or 2 tbsp minced garlic
  • 1 cups whole wheat flour
  • 1/2 cup unsweetened plant-based milk
  • 3 tbsp. vegan Worcestershire sauce
  • 2 tbsp. soy sauce or tamari
  • 2 tbsp. olive oil
  • 2 tbsp. ground flax seeds
  • 4 tbsp. tomato paste
  • 1 tsp. liquid smoke
  • 1/4 tsp. black pepper

Instructions:

  1. Dice the onion and carrots. Chop the celery and mince the garlic.
  2. Drain and rinse the chickpeas.
  3. Preheat oven to 375° and lightly oil a 9 inch loaf pan.
  4. Mash the chickpeas up, blend, or process until broken up.
  5. Saute the vegetables until soft and the onions are translucent.
  6. Then mix together all the other ingredients in a bowl with the chickpeas.
  7. Press mixture into prepared loaf pan and bake 55 minutes.
  8. Remove from oven and allow to cool at least 10 minutes before cutting.
  9.  Serve with gravy or tomato sauce and a couple of sides. ( I served it with green peas and mashed potatoes)
