Serves 4

Ingredients:

  • 1½ cups dried lima beans
  • 2 bay leaves
  • 4 cloves garlic
  • 4 cloves
  • 1 large onion
  • 2 celery stalks
  • 2 carrots
  • 1 green bell pepper
  • 1 tsp thyme leaves
  • 1/4 cup tomato paste

 

Directions:

  1. Soak the lima beans for 8 to 10 hours ahead of time! Chop the onion, carrots, and celery. Peel the garlic but don’t chop.
  2. Simmer the lima beans with the bay leaves, cloves, and garlic for 1 hour until the beans are tender. When done, remove the bay leaves, clove, and garlic.
  3. While the beans are cooking saute the onion, celery and carrots in a large saucepan until soft. Add the green pepper and thyme and cook for a few more minutes.
  4. Add the tomato paste and cook for 1 more minute. Finally add the vegetable mix to the cooked beans and cook for 15 minutes over medium heat.
